We reached the end of our Kyoto bike tour at lunchtime and our guide brought us to what he said was one of his favorite places to eat. Their specialty is this egg-based thing that was sort of like a tostada and a burrito, all in one. It was delicious and I was fortunate enough to be allowed to photograph the chefs as they prepared some fresh ones. I have no idea what these Japanese tostada/burritos are called, but I would sure like to enjoy another one today. I guess this is really Peeps in the kitchen...

Ohhhh, these look delicious. I can see egg white slithered off onto the hot grill plate (left), and the ones on the right resemble a (flat) taco salad.
Is she about to fold it in half, or lift it to a plate?

This might be a takeoff on okonomiyaki. I love the Hiroshima style with lots of cabbage, ramen noodles, bacon (uncured, really a fresh side pork sliced thin), an egg, and the sauce. Absolutely delicious stuff! I like it so much, I try to make it here at home. It's not as good as in Japan, of course, but passible.
